Mentions fields definition improved

We heavily updated the definition of the mentions fields, to better reflect reality: Mention Field Definition

Main changes:

• Long deprecated fields removed.
• Added a few undocumented fields.
• Clarification on the correct use of certain fields like contentSourceName and contentSource
• Improved description of complex objects like categoryDetailsor `classifications.
• Timestamp format fixed
• Cosmetics.
